Classic, Refreshing Summer Cocktails and Mixed Drinks
Here at Brewbound, we love to enjoy a cocktail on a warm summers day. So we’ve compiled a short list of some of our favourites to give you some inspiration for the summer BBQ drinks.
Pimm’s is always a hit with a crowd. Pimm’s is a gin infused with a range of herbal botanicals, caramelised orange and delicate spices. The most common way to serve this fantastic summer cocktail is mixed with lemonade and served with fresh mint, chopped cucumber, strawberries and oranges.
Another variation of this classic party drink is the “Pimm's Royale” for those exceptional celebrations, or if you’re particularly flash with the cash. The Pimm’s Royale replaces the lemonade in a regular Pimm’s with a glug of Champaign (or Prosecco). We recommend serving this in a highball glass due to the higher alcohol content (As well as the cost of Champaign).
The name say’s it all, Aperol is the perfect aperitif. Bright orange in colour and with a unique flavour Aperol has a place for any summer gathering. Aperol Spritz is another absolute classic 1920’s cocktail although this time originating from Italy rather than the U.K.
Here’s how you make the perfect Aperol Spritz:
1. Ice and a slice of Orange
2. three parts Prosecco
3. two parts of Aperol
4. one splash of soda
Cointreau: a masterpiece crafted through the unique distillation of all-natural sweet and bitter orange peels, resulting in a crystal clear liqueur that strikes the perfect balance between sweetness and freshness.
Cointreau breeze is an incredibly simple but delicious summer cocktail. Simply combine over ice:
1 ½ oz Cointreau
1 oz Cranberry Juice
2 oz Fresh Grapefruit Juice
Pina Colada is a sweet tropical cocktail combining classic summer tastes of coconuts and pineapple. The best way to make this summer delight is with Malibu coconut rum, Pineapple juice, prosecco, and a wedge of pineapple. Add a Maraschino cherry as garnish if you’re feeling extra fancy.
Spiced Rum And Ginger Ale
Spiced Rum and ginger ale is an incredibly simple thirst quenching tipple, simply combine one part spiced rum to 5 parts Ginger ale, serve over ice and add a wedge of lime for that extra fresh zing.

Gin and Tonic
Although one of the most common Mixed drinks Gin and tonics are highly variable depending upon the Gin used and the particular botanicals infused into the Gin. Known for it’s Iconic Sapphire blue bottle and unique vapour infusion process, Bombay Sapphire is one of the most highly regarded Gins available. Perfect for the summer months. Plus its timeless, elegant bottle makes it an ideal addition to any liquor carbonate.
Merely combine Bombay Sapphire with tonic water and a fresh slice of lime. Alternative for something slightly different, garnish with a slice of cucumber instead.
A classic Vodka based cocktail the Moscow Mule Combine vodka and ginger beer in a copper mug or highball glass filled with ice. Add lime juice. Stir gently and garnish with a lime slice. Smirnoff is the most popular vodka sold in New Zealand and makes an utterly refreshing Moscow Mule. This cocktail can also be made with Gin, depending upon your preference.
